To end my birthday Indian feast, I decided to try a recipe from the beautiful cookbook Rachelle had gotten me for Christmas; "Just 5 Things: Gourmet Cooking with Just a Handful of Ingredients" by Rachel Lane. I've been wanting to try my hand at making chocolate souffle ever since I had some at my friend Wynnie's hourse warming.

1/2 cup butter, cut up
1/2 cup sugar
4 ounces of semisweet or dark chocolate, coarsely chopped
2 large eggs
2 large egg yolks
2 tsp all-purpose flour
- Preheat the oven 400 degrees
- Grease four small ramekins with 1 tbs of butter and sprinkle with sugar, shaking out the excess
- Melt chocolate with remaining 7 tbs of butter, set aside
- beat eggs and egg yolks with electric mixer at high speed until pale and thick
- Use rubber spatula to fold the chocolate mixture and flour into the beate eggs
- Pour mixture evenly into prepared ramekins
- Bake for about 10 minutes or until set.
The result was a decadent chocolatey desert. Rachelle almost melted into a puddle. My complaint is that it is difficult to see if the entire thing has set. How am I supposed to know that the middle had not set? So we had something between a chocolate souffle and a molten cake. Kevin thought it was too sweet and rich, but he's not a dessert kind of guy. You really need be to a chocolate lover to eat this. It was simply delicious.

Oh my goodness! Looks amazing. What a ka-winky-dink I made a post about my sissy chocolate cupcakes. Your souffle doesn't look like a sissy at all! :)
Oh yes, I don't eat it often either! Fluffy, light, rich, fruity, cream, every dessert is good! hehehe.
