Hazelnut Chocolate Orange Biscotti

Rachelle and I took a one-night baking class at the Loblaws close to my place. We baked biscotti, and a cream-filled cookie. The class was so much fun. We were able to share the treats with our co-workers the next day and they all loved it. :)

  • 6tbsp Butter, softened
  • 1 cup Sugar
  • 2 large eggs
  • 2 tsp finely grated orange zest
  • 1/4 tsp Vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3 tbsp unsweetened cocoa
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup semisweet chocolate chips
  • 1/3 cup toasted and chopped hazelnut pieces

  1. Preheat over to 350 degree
  2. Cream butter and sugar until light and fluffy (about 3 minutes)
  3. Add eggs, orange peel, and vanilla. Beat for 3 minutes
  4. In a seperate bowl, stir together flour, cocoa, baking powder and salt
  5. In tree batches, add the flour mixture to the wet mixture. Beat at low speed until combined.
  6. With a spoon, mix in chocolate chips and hazelnut
  7. If mixture is too wet, add more flour.
  8. Divide dough into 3-4 pieces. On a floured surface, roll each piece into 1 1/2 inch diameter long and flatten lightly.
  9. Arrange two logs per baking sheet and bake for 20 minutes.
  10. After cooled for about 10 minutes, cut each log into 1/2 inch slices diagonally and place cut side down.
  11. Bake again for 6 minutes, cool and enjoy with your coffee.
Rachelle and I like our biscotti chewy, so we decided to skip the second bake. They came out great.
